It's A Souptacular

CAN YOU EVEN STAND THE EXCITEMENT?

Ahem.

I’ve decided to share three recipes, mainly because I’d already posted a couple of them before and quite frankly I loved the idea of cutting and pasting so that I wouldn’t have to type as much.

My ambition is inspiring, isn’t it? I’m thinking of writing a motivational book. Only I can’t seem to get started.

Anyway, I love these first two recipes, and while I’ve mentioned before that D does not find the cream of zucchini recipe to be very, um, hearty, it is delicious nonetheless. The red beans and rice is incredibly filling (BEANS! AND SAUSAGE!), and I really could eat it once a week. It’s one of our favorites.

Cream of Zucchini Soup

2 medium zucchini, grated
2 medium carrots, grated
1 medium onion, chopped
1/2 cup butter
4 tablespoons flour
2 13 1/2-ounce cans chicken broth
4 ounces grated Monterey Jack cheese
1 cup milk
1 teaspoon salt
1 teaspoon pepper

Place grated zucchini in a colander; sprinkle with salt and let sit for 30 minutes. Drain well. Saute’ grated and chopped vegetables in butter, until slightly limp. Stir in flour and cook over low heat for 5 minutes, stirring constantly. Slowly add chicken broth and stir until smooth. Add grated cheese and stir until melted. Add milk, salt and pepper. Serves 6.

Delta Red Beans and Rice
from Southern Living

1 pound dried red beans
6 cups water
1 1/2 pounds smoked sausage, sliced (I use turkey Polska Keilbasa)
1/2 pound cooked ham, cubed
1 large sweet onion, chopped
2 garlic cloves, pressed
2 tablespoons olive oil
1 bunch green onions, chopped
1 cup chopped fresh parsley
1 teaspoon salt
1 teaspoon ground black pepper
1/2 teaspoon sugar
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/8 teaspoon ground red pepper
1 tablespoon Worcestershire sauce
1/4 teaspoon hot sauce
Hot cooked rice

Place beans in a large Dutch oven. Cover with water 2 inches above beans; soak 8 hours. Drain.

Bring beans, 6 cups water, sausage, and ham to a boil in a Dutch oven. Cover, reduce heat, and simmer 3 hours.

Sauté onion and garlic in hot oil in a large skillet until tender. Add to bean mixture. Stir in green onions and next 9 ingredients. Cover and chill 8 hours.

Bring bean mixture to a simmer; cover and cook, stirring often, 1 hour. Serve over rice. Serves 8-10.

This last recipe is pretty well-known, but I love it because it can cook all day in the crockpot, it is super simple, and it tastes great. Which has to be some sort of soup trifecta.

Potato & Cheese Soup

2 pounds baking potatoes, cubed (I don’t even peel them; I just wash them really well)
1 can cream of mushroom soup
1 can cream of celery soup
1 can cream of chicken soup
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon ground red pepper

Cook on low 6-8 hours.

After potatoes are tender and you’re just about ready for your meal, add:

1 cup milk
1 1/2 cups freshly grated sharp cheddar cheese
8 ounces sour cream
1/2 cup green onion
1 pound cooked bacon (OH YES MA’AM)

Stir all ingredients together, then cover and continue to cook on low for 15-20 minutes. Serves 6-8.

    I linked to a soup recipe on my blog that everyone that has tasted .. has loved it! Since that original post back in September, I have made it quite a few times and the last time I did add some Italian Sausage that I sliced up and browned first. It was D-LISH! I’ve always used fresh tomatoes because they were in season so we’ll just have to see if it’s as good with those ones that come in the can ;) Now I’m having a major craving ….. tomorrow may have to be a soup night! (or after this exchange, the next month will be soup nights!)

    Yummmmmm. Love that soup. :)I actually started my post 2 nights ago … and something about four kids and a cotton-stripping hubby got in the way…alas I was off to bed and stopped dead in my tracks when I remembered the soup-a-thon. I would have laid in bed wide awake all night, I’m sure :).

    CHICKEN TACO SOUP
    1 can diced tomatoes (I like petite diced)
    1 can Rotel tomatoes & green chiles
    1 can Ranch Style Beans
    1 can Pinto Beans
    1 can Corn
    1 envelope Dry Taco Seasoning
    1 envelope Dry Ranch Mix
    1 Rotisserie Chicken, deboned & cut into pieces.

    Put all canned items in a pot with dry seasonings and simmer for about 15-20 minutes. Add chicken and heat long enough to warm chicken. You can eat it with a piece of cornbread or with cheese, tortilla chips, sour cream and guacamole on top…or both!!

    The cream of zucchini sounds so good, but with my man being allergic to chicken, I am wondering if there is any suitable substitute for the chicken broth. Do you think vegetable broth would work?

    I might just have to make him something else next time we have soup night.

    My family loves soup. I will have to slowly take time to check out all the recipes. It’s such a busy time of the year, I won’t have time to do it all at once! I’m taking my teenage son Christmas shopping tomorrow (obviously, he is going because we are looking for clothes for HIM!) anyway, I think I will put that Potato & Cheese soup on before we head out. Sounds yummy…I just wish we had cooler weather to go with all that soup goodness. Supposed to get 80 here in Houston today!

    Ooo, now what’s just made to go with soup? CRACKERS! And that reminded me at lunch today that I -needed- to tell you all this. If you haven’t already, you need to try the onion flavoured saltine crackers. Oh. My. Golly.     Now, being one of *those* veggie people… do you think, say in the case of one of your fine recipes above, it would be fine taste wise to replace that chicken soup/broth (which I’m sure is wonderful but…), and replace it with veggie soup/stock?

    And even if I could master Mister Linky, my audience of three would scoff and howl if I were to post a recipe of any sort on my blog, because it’s widely known that, due to a rare genetic condition known as Extremus Lazyitis, I am rendered unable to cook.

    However. I will gladly share with you a most scrumptious soup recipe from a woman who can cook up a veritable storm, my mother-in-law.

    When I was good and pregnant with twins, she generously offered to shower me with any gift my heart desired, and this was my lone request: a freezer stocked with her corn and wild rice soup with smoked sausage.

    M’m, m’m, good. See for yourself:

    12½ cups (or more) canned low-sodium chicken broth
    1¼ cups wild rice (about 7½ oz.)
    6¼ cups frozen corn kernels (about 2½ lbs.), thawed
    2 tbsp vegetable oil
    10 oz. fully cooked smoked sausage (e.g., kielbasa; I use about a pound of Cajun hot sausage.)
    3 carrots, peeled and diced
    2 medium onions, chopped
    1½ cups half-and-half
    Chopped fresh chives or parsley

    ***

    Bring 5 cups broth to simmer in heavy medium saucepan over medium heat. Add wild rice and simmer until all liquid evaporates and rice is almost tender, stirring occasionally, about 40 minutes.

    Meanwhile, blend 3¾ cups corn and 1½ cups chicken broth in processor until it is a nearly smooth puree.

    Heat vegetable oil in heavy large Dutch oven over medium-high heat. Add sausage and sauté until just brown, about 5 minutes. Add carrots and onions and stir 3 minutes. Add remaining 6 cups chicken broth and bring soup to simmer. Reduce heat to low and simmer soup 15 minutes.

    Add cooked wild rice to corn puree and remaining 2½ cups corn kernels to soup. Cook until wild rice is very tender and flavors blend, about 15 minutes longer. Mix in half-and-half. Thin soup with more chicken broth, if desired. Season soup to taste with salt and pepper.

    Note: Soup can be prepared up to 2 days ahead. Refrigerate until cold; cover and keep refrigerated. Rewarm soup over medium-low heat before serving.

    Ladle soup into bowls. Garnish with chives or parsley and serve. Makes 12 servings.

    oh my word. i was so tickled to realize that i made POTATO soup on soup day and i didn’t even KNOW! now, i’ve commented before on how soup is not considered dinner at my house by my dear manly husband, and so this was not a common occurance. i find it delightfully coincidental that i made a delicious soup on the very day that i was supposed to!
