Well, I think we can all agree that it’s a glorious time of year. In addition to the fact that fall is just around the corner and September is blessedly, unseasonably cool so far, college football is now underway. In fact, as I’m writing this post Boise State and Oregon are playing on ESPN, and even thought I am always a wee bit puzzled by Boise State’s blue football field, I am TICKLED TO PIECES to see them on my TV screen tonight.
Because where college football leads, dips will most always follow.
Hallelujah. Give the Lord a handclap of praise.
I don’t think I’ve ever – EVER – met a dip that I didn’t like, and as far as I’m concerned there’s no more perfect gameday menu than about four or five dips and an assortment of chips. And I think it goes without saying that at least one of those bag-o-chips needs to be Fritos.
I adore a Frito.
Anyway, whenever my beloved Mississippi State Bulldogs play a televised game, you can rest assured that a couple of things will be happening in our house: 1) I will be vacuuming, because I get very, VERY nervous when the Bulldogs play and there’s something about vacuuming that soothes my nerves, not to mention that all my yelling isn’t nearly as obnoxious when the vacuum drowns it out and 2) I will be eating cheese dip. Well, and 3) I will be drinking diet Coke over ice.
And 4) I will be calling my sister at least 5 or 20 times.
We’re sort of enthusiastic about our Bulldogs around here.
So in the spirit of fall and football season and fun times with family and friends, here are a few dips that I love to make for college gamedays.
Caramelized Onion Dip
from Come On In
1 tablespoon REAL butter
1 tablespoon canola oil
1 large red onion, quartered, very thinly sliced
1/2 cup sour cream
1/2 cup REAL mayonnaise
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 teaspoon red pepper flakes
1/8 teaspoon Tabasco sauce
Saute’ onion in butter and oil until caramelized (takes about 15-20 minutes). Cool and combine with remaining ingredients. Mix well and chill for at least 1 hour. Serve with chips or crackers – or both if you’re feeling crazy. Serves 6.
Asian Style Dip
from Epicurious
1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons soy sauce
1/2 tablespoon dried basil
1 tablespoon sesame oil
1 tablespooon toasted sesame seeds
1 tablespoon rice vinegar
1/4 teaspoon dried ginger
1 teaspoon sugar
1/2 teaspoon dry mustard
1/8 teaspoon ground red pepper
Combine first 11 ingredients in a small bowl; whisk to blend.
Cover and refrigerate. Serve with assorted cut-up vegetables (carrots, red bell peppers, sugar snap peas, cucumber, broccoli – whatever you like). Serves 6.
And finally, I’ve posted this recipe before, but OH MY WORD it bears repeating, mainly because it will change your life forever.
White Rotel Dip
from my sister-in-law Janie
3 packages of pork sausage (mild or spicy is fine – but use at least 1 maple-flavored)
4 packages of cream cheese
2 cans of Rotel tomatoes
Brown sausage and drain. In a large saucepan, combine all ingredients and heat until cheese is melted, being careful to stir often.
Serve with tortilla chips. And as I said the first time I posted it, if you’re worried about eating cream cheese AND sausage in the same dish, don’t worry because the tomatoes are TOTALLY healthy, and therefore you’ll be just fine.
I hope y’all have a great time looking through all the recipes today – I cannot WAIT to find some cheese-laden treasures. And remember: when you add your post to the Mr. Linky, please link to your specific post – not your general blog URL.
Happy DipTacular, y’all!

Cream cheese is a dairy product right? And don’t they say you should have 3-5 servings of dairy a day?
Got cream cheese?

I don’t want to post over my Family Recipe Friday carnival today, and OhAmanda “stole” the only dip I usually make, but when I am feeling very reee-fined, I make this Antipasto Salsa from Cooking Light:

OH my. I’ll have to bookmark this post! I just put up a post about turtle soup, but, it’s not edible, so I don’t think I shall link. But my favorite dip includes sour cream, mayo, dill weed, dried onion, and Hormel’s Deviled Chicken. And while it’s called Dill Dip, it’s the chicken that really makes it yummy!
Go DAWGS!!!!! (Georgia, that is…..)
September 4th, 2009 at 8:17 am
I love dips therefore I love this idea!
September 4th, 2009 at 8:20 am

HAPPY LABOR DAY WEEKEND!
September 4th, 2009 at 8:55 am
Yea, that rotel dip got even my grandmother’s approval, and she hates everything that she didn’t make herself. I haven’t got time to post my dips today, but I’m going to email them to you, because they are easy and you will appreciate all the cheese.
September 4th, 2009 at 8:56 am
So I’m another blog-less reader, but I just wanted to say that if you haven’t tried Harry & David’s Pepper and Onion Relish as a dip you must!!! You just mix a jar of it up with two blocks of cream cheese and it is to die for. It is a staple at any events our friends or family host. Yummy with chips-and even veggies for those healthy eaters!
September 4th, 2009 at 9:00 am
Thanks for this fabulous carnival- I’m furiously copying recipes ;-)
September 4th, 2009 at 9:06 am
I was so thrilled that you mentioned Boise State on your blog today, I am a BSU alum. Here in Idaho we call the blue turf the “smurf turf”. Love your blog.
September 4th, 2009 at 9:06 am
Yeah, that last dip? Made me cry it was so good.
September 4th, 2009 at 9:23 am

September 4th, 2009 at 9:25 am
What a wonderful idea…..love dip!!!!!
Now I have SO MANY to make!!! Thank you, thank you!!!!
September 4th, 2009 at 9:29 am
I don’t have a blog, but this dip is very good and easy.
Strawberry preserves
whipped cream cheese
fritos
Mix preserves with cream cheese. Dip fritos and enjoy!
(Apple pepper jelly instead of strawberry is also very good.)
September 4th, 2009 at 9:35 am
You have no idea what this is going to do to my weight loss efforts! Oh and HAPPY FOOTBALL SEASON, because it is it’s own holiday isn’t it?
September 4th, 2009 at 9:36 am
Wow. You obviously had a great idea. All these dip recipes are fabulous.
September 4th, 2009 at 9:45 am
This is not a dip so I didn’t want to add it to the dips … but I have a recipe for FRITO SALAD that I think you will love.
1 bag chili cheese fritos
1 can corn (drained)
1 2cup bag of cheddar cheese
some diced red onion (to taste)
1 cup mayo
mix all together (except fritos) and add fritos to mayo mix right before serving.
This would be a good time to mention that sometimes I do use the mayo mix as a dip for the chili cheese fritos because the fritos will get soggy once they are in the salad for like an hour or two. Also, I’m not completely sure about the 1 cup mayo because I just sort of add enough to make everything else stick together so … be flexible. But this is my most favorite, easy, delightful salads to take places. And it will be GREAT for football!
September 4th, 2009 at 9:45 am
Woot!!
Thanks for hosting, BooMama. Can’t wait to curl up with my ‘puter and a grocery list and get to makin’ some of these.
September 4th, 2009 at 9:46 am
Putting one up later…
I have to say that White Rotel does sound yummy but should be renamed “Heart Attack on a Chip.”
September 4th, 2009 at 9:47 am
I had blog posts planned for today and tomorrow (and I’m a little OCD about posting no more than once a day and following my schedule, hehe), so I’ll put my recipe here:
Peanut Butter Dip:
1 cup Peanut Butter
1 cup Softened Cream Cheese
1 cup Brown Sugar
1/4 cup Milk
Mix it all together. I serve it with apples, carrots, celery, and pretzels – DELICIOUS!!!
September 4th, 2009 at 9:48 am
Please remove my link at #17, in my haste to link up prior to my children waking I neglected to link to the specific post.
I have re-linky’d.
September 4th, 2009 at 9:52 am
Can’t wait to try your white Rotel dip! Never tried it and sure I’ll love it!!!
The second comment has the recipe I posted on my blog, but they say to eat with Wheat Thins…..that’s too healthy!! Frito’s are much more addicting and enjoyable! :-)
September 4th, 2009 at 9:55 am
Man alive but do I love that white Rotel dip.
Are you ready for the big game tomorrow? We’re so there!
September 4th, 2009 at 10:01 am
My favorite dip recipe is:
Spinach Dip
1 cup sour cream
1 cup mayo
1 package frozen chopped spinach (thawed)
1 envelope Knorr vegetable soup mix
Mix ingredients together. Refigerate for 3-24 hours and serve with crackers, tortilla chips or sourdough bread.
September 4th, 2009 at 10:02 am

September 4th, 2009 at 10:25 am
Oh Sophie – I was tickled to death that you gave a shoutout to Boise State. What a game! We live here and BSU has converted me into a college football fan. And anybody who knows me can’t imagine how in the world that happened. I don’t understand a thing about the game and I don’t understand the rules at all – but I have never missed a single game since the Fiesta Bowl!!!
It’s gonna be a great season!!!
September 4th, 2009 at 10:26 am
I walked in the room to the football game on last night and thought the same thing . . . What’s up with that blue field??
Odd! Can’t wait to try the white rotel!
(found you through uncommonblonde btw)
September 4th, 2009 at 10:26 am
Oh, and the blue field? When you see it in person it is really beautiful. And fun. And memorable!
September 4th, 2009 at 10:34 am
By the way….you mean you didn’t watch Spurrier?
September 4th, 2009 at 10:43 am
I don’t have a post about this dip. But if I did it would be 3 sentences long. So I’m just commenting.
Here it is:
Put block of cream cheese on a plate & let get to room temp. Pour Pickapeppa sauce over cream cheese. Serve.
(Pickapeppa is usually near the worcestershire & hot sauces in the store.)
Easy peasy & delish.
September 4th, 2009 at 10:58 am
I heart dip!! I posted lots of my faves.
September 4th, 2009 at 10:59 am
I love all the dips! THANK YOU!
Here is my go-to Corn Dip:
2 cans of corn (drained)
1 block of cream cheese
1/2 stick of butter
1 can chopped green chilies
a few chopped slices of jarred jalapenos
some of the jalapeno juice too (depending on the heat you can stand)
Dump all of the ingredients into a pot on the stove and heat through until everything mixes. Serve with tortilla chips.
September 4th, 2009 at 11:01 am
YUM! I’m so excited about all these dips to try!!

September 4th, 2009 at 12:38 pm
I. Love. White. Ro-tel. Dip!
Thanks so much for the exact ratio/ proportion to use. Every time I ask somebody for their recipe, they just say, “Oh, its, just cream cheese, sausage, and Ro-tel” I want to know how much!!!
Thank you, thank you, thank you!
September 4th, 2009 at 12:46 pm
This is the best linky ever. I can not WAIT to go through EVERY link and get all the diptacular results. THANK YOU!!!
September 4th, 2009 at 1:24 pm
Hi, BooMama! I hopped on over here from BigMama’s blog. And to find a list of dips! What a day! I can’t wait to test the White Rotel Dip. You are right-on about the Fritos. Fritos Scoops to be exact. Thanks for the recipes! Happy Dipping!
September 4th, 2009 at 1:25 pm
I don’t have a dip recipe to share yet, but since you love Fritos, I want to share an idea! My high school used to serve “Bag-O-Chili” at the football games. Open an individual bag of Fritos, spoon some chili over the top (or hot dog sauce if you don’t like beans), then some Cheese (shredded or Whiz!), a dallop of sour cream, and a few banana peppers! And you can take it with you to the couch, that’s the best part! You. are. welcome! ;)
September 4th, 2009 at 1:43 pm
Wow! This is a virtual encyclopedia of dips! Thanks for putting this together, Boo Mama!
September 4th, 2009 at 1:44 pm

Mmm… delicious recipes ladies!
September 4th, 2009 at 2:26 pm
I am so saddened to tell you I don’t have an original recipe to share. I thought about posting an AllRecipe as my own but had second thoughts.
But here’s my confession:
My name is Lauren, and I’m a cheese-a-holic.
September 4th, 2009 at 2:41 pm
This post alone is to blame for the 25 pounds I plan to gain this football season.
And by the way, I’ll be stealing your “Give the Lord a handclap of praise” as my new closing line. :)
September 4th, 2009 at 2:56 pm
Fabulous idea! Can’t wait to try so many of these! Thanks for hosting!
September 4th, 2009 at 2:58 pm

September 4th, 2009 at 6:01 pm
Oh, I just LOVE this! This is enough dip to actually eat dip every single day of the college football season straight on thru to the National Chamopinship game on January 7th with enough days lefotver to eat on to the Super Bowl! Bowing (momentarily and in as non-heathen a way as possible) to the altar of Philadelphia Cream Cheese! Happy Dipping!
September 4th, 2009 at 6:51 pm

Question if you actually see this.. How do you do you caramelize the onions without them sticking or getting over done. I bet you have a great saute pan I bet that is the trick
September 5th, 2009 at 1:40 pm
Thanks for doing this! I’m so excited to check them all out!
September 5th, 2009 at 1:54 pm
Thanks! I’m definitely going to try the sausage creamy one on my small group of ladies – they’ll love it!
September 5th, 2009 at 2:12 pm
Have you ever looked at the ingredients list for Fritos? Corn, Oil, Salt. It’s like eating a daggum vegetable! They make every dip a health food.
September 5th, 2009 at 2:54 pm
HOLY COW that’s a lot of dips! I am a chip n’ dip girl so i can’t wait to look at them all.

This is my first time ever linking to another post! I love it! I especially love the Dip Party! Thanks for hosting it!
September 5th, 2009 at 10:01 pm
I don’t really have much interest in football. None of the schools I went to had a team. But, I HEART dip. So I posted 3 of my faves. Thanks for all the fun. I’ve been copying and pasting all day.
September 6th, 2009 at 11:13 am
I’m sure the dips I posted have been posted but I wanted to add them anyway. They are the only two dips I could think of with cream cheese and they are my favorites. :) But with 244 other dips to select from I’m sure I’m about to find some other favorites. Thank you to Soph and Melanie for coming up with this great idea. I can’t wait to read the other recipes! :))
September 6th, 2009 at 3:22 pm
I love this post! We’re vegan so don’t eat dairy, but I’m looking forward to “veganizing” a couple of these recipes and trying them out. Thanks!
Marly
September 6th, 2009 at 7:26 pm
What a fun blog – I love your “saying” under your heading….very cute.
Had to post just because I too, love dips – but even more – love college football.
What I don’t love, is that stupid blue field (it should be outlawed) – or how the Ducks played (very sad), or how La Garret Blount made us look so savage. Yes, we are AVID college football fans – live in the land of University of Oregon and come alive when fall comes our way.
Thanks for the fun blog!
September 7th, 2009 at 11:11 am
Oh my goodness I think I’m in heaven! Look at all these awesome dips! I just started hosting a Monday Munchies meme over at The Krazy Kitchen. I can’t wait to try and feature some of the yummy recipes here!
September 7th, 2009 at 8:25 pm
I have loved reading all of the great dips! Can’t wait to try them. I do not have a blog, but wanted to share a yummy dip!
Raspberry Chipotle Dip
8 oz. Cream cheese
1/2 onion
1 can black beans
1 can raspberry chipotle sauce
1 package shredded pepper jack cheese
Mince onion very fine and combine with cream cheese. Layer bottom of dish with cream cheese, and spread beans over the top. Place raspberry chipotle sauce in center of dish. Top with pepper jack cheese. Bake until cheese is melted and dip is warm throughout. Serve with tortilla chips (the ones with a hint of lime are great with this dip!)
September 7th, 2009 at 10:06 pm
Thanks for hosting this awesome dip party! I left a link to my dips. I think this is a fabulous idea and I can’t wait to try out some of these dips!

Ma Cantrell’s Famous Cheese Dipper
This recipe has been passed down from an old hillbilly relative for generations.
1 can cream of chicken soup
1 can diced green chilies
1 -5 oz. can evaporated milk
1 lb. velveeta
I know what you are thinking but yes they had velveeta and cream of chicken soup back then.
Heat the ingredients slowly in a saucepan.
Serve with tortilla chips.
Yummy!!!

Hi Sofa,
Just wanted to let you know that the White Rotel Dip was delish. And while I feel the same mentally, it did manage to change my life: I gained exactly 1.6 pounds eating it. Okay, maybe it changed me mentally, too, because I’m annoyed at the weight gain. But, well, what can I expect after eating basically the entire Crock-Pot-full all by myself?
