Normally we go out of town for Thanksgiving Day, but this year we’re staying home. We’re having a wee-little gathering at our house, and with the help of the fine people at Honeybaked Ham, I’m doing all the cooking. I love doing all the cooking, by the way. Especially when all the cooking doesn’t involve a big ole dried-up turkey.
(To be clear, I am a turkey fan.)
(However, I have never had much success cooking a turkey.)
(Mainly because one time our friend Benji deep fried one for T’giving, and I have been RUINED by its deliciousness ever since. Baked turkey stands in the shadow of fried turkey and cowers.)
Anyway.
This morning I looked at the date on my computer and thought it rang a little bit of a mental bell – and sure enough, I looked back at my posts and realized that I started my blog four years ago today. That is so hard for me to believe. Especially since this is what Alex looked like in the blog’s early days.

Did you just hear me sigh? Because I sighed really, really loudly.
And while I could sit here and wax nostalgic for a sweet forever, I’m going to resist that temptation and say this instead: I am so grateful for every single one of you who stops by here to read every now and again. Your kindness and your hilarious comments and your tolerance of my never-ending obsession with Mississippi State football and basketball have been an incredible blessing in my life and my family’s life. I cannot say “thank you” enough.
I hope y’all have a wonderful Thanksgiving – and I hope you’re surrounded by people you love.
I also hope you’re surrounded by some really good casseroles. And maybe even some homemade chocolate pies.

I have given up on trying to bake a decent turkey, and am too a-skeert to try and fry one in one of them big ol’ burnin’-oil things, so we went the Honeybaked route, too!

Oh Sophie – the miracle that has saved my turkeys and made me look like I might know how to cook is called the Reynolds Oven Bag. If you follow the directions, cook it the amount of time for the weight of your turkey – NO DRY BIRD!! and plenty of juices for good old fashioned gravy (which I AM GOOD AT!!) THANK YOU – for brightening all of our lives – your ‘crazy’ makes us all feel like we’re not so crazy ourselves!!

Sophie: I am so glad that I found out about you at the “Siesta Fiesta” August of 2008. Your humor is well splent on me, I love it! You literally crack me up, and I thank you for that!
I was surrounded by squash casserole, brocccoli casserole, sweet potato “souffle” and some butter peas, green beans and mashed potatoes and gravy, and cornbread dressing and turkey and ham. Oh my my my, us Southerners know how to do Thanksgiving!
I am now craving chocolate pie, thank you very much. There is nothing better – I may have to make one. Soon.

While we didn’t have chocolate pie, we did have a chocolate layer cake that was TO DIE FOR (chocolate cake, chocolate ganash (sp?), whipped cream….*sigh*).

I love doing the cooking myself, too…and usually have Thanksgiving at my house, especially since my mom went home to heaven a few years ago. But this year, we went to my aunt’s for dinner…and I’m missing the cooking and the leftovers so much that I’ve decided to cook a second Thanksgiving here, tomorrow! =)

I know what you mean by ruined! Hubs fried a turkey one year and that is how we have had it ever since. It’s so delicious! And we even had the home made chocolate pie to boot! And as long as you don’t mind a little Aggie football come on over anytime you like I might even share my green bean bundles wrapped in bacon, yes bacon! yummmmmmm.

BTW, here’s a tip for making sure you have a moist oven roasted turkey — brining. Brine your turkey beforehand and it will be oh soooooo tender and good.
