Okay – so I haven’t done very well with listing menus the last couple of weeks. But I have cooked. And I will plan and post again this weekend. Oh yes I will.

Monday 7/30 – Mexican Wraps (chicken, refried beans, sauteed onions and sour cream wrapped in whole wheat flatbread)

Tuesday 7/31 – Baked Spaghetti with garlic bread

Wednesday 8/1 – leftovers

Thursday 8/2 – Roast Beef with potatoes and carrots (sweet potatoes for me)

Friday 8/3 – Kalyn’s Chicken Tacos, only not with chicken – I’m using leftover roast beef. But just for the record, this recipe is my FAVORITE way to use leftover meat. Oh-so-good.

Monday 7/23 – Pioneer Woman’s Man Pleasing Sandwich

Tuesday 7/24 – Unmemorable chicken breasts cooked in cream of mushroom sauce with breadcrumbs on top. Plus some grits and black beans that were totally memorable – at least to me.

Wednesday 7/25 – Country fried steak, rice and butterbeans

Thursday 7/26 – Crispy Oven Fried Drumsticks (with whole wheat bread crumbs instead of cornflakes) and some form of vegetable

Friday 7/27 – Vegetables and cornbread

Saturday 7/28 – Grilled chicken and sweet potato fries

Monday 7/16 (well. it’s been awhile, hasn’t it?) – Hamburger steak with sweet potato fries for me, regular fries for the boys

Tuesday 7/17 – Grilled chicken with spinach, tomato and garlic pasta

Wednesday 7/18 – Fresh veggies for dinner – squash casserole, baby lima beans, cornbread and fresh tomatoes

Thursday 7/19 – Parmesan chicken with brown rice and black beans

Friday 7/20 – Sister and her hubby are coming to town – and I’m not cooking, because why, why would I do that, why? Sister and I could be watching DVDs of old pageants instead while D. and B. blow up large militant organizations on the Xbox.

Monday 7/2 – Pioneer Woman’s Chicken Sandwiches (we ended up eating with friends Friday night, so the chicken sandwiches got moved to the back burner)

Tuesday 7/3 – Breakfast for supper – pancakes, eggs, bacon, biscuits, etc.

Wednesday 7/4 – hamburgers, baked beans, green salad, French fries for the boys

Sunday 5/27 – BBQ Meatball Subs on whole wheat bread (buy premade meatballs at Walmart, pour (low-sugar) BBQ sauce over them and heat for 30 minutes on the stove). For some reason, this is one of David’s favorite meals.

Monday 5/28 – Grilled Chicken, Baked Sweet Potatoes, Green Salad

Tuesday 5/29 – Parker’s Beef Stew

Wednesday 5/23 – Giada’s Roast with lima beans and homemade macaroni and cheese

Thursday 5/24 – Mexican Pot Roast Tacos (made with leftover roast) and Mexican Grilled Corn

Friday 5/25 – Hamburgers on the grill, French fries, and baked beans with Mama, Martha, and Emma Kate’s family

Saturday 5/26 – Out to supper (THIS IS WHEN WE WILL EAT SOME MORE CHICKEN)

Sunday 5/14 – Maria’s Crockpot Chicken with black beans and rice. Everyone loved it. Alex said, “this is good chicken, Mama.” I did not eat rice because white carbs are not my friend.

Monday 5/15 – Giada’s Chicken Parmesan with whole wheat noodles and salad. But I will so be using Prego instead of Giada’s homemade tomato sauce, delicious though it may be.

Tuesday 5/16 – Supper with friends. Because that is what we do on Tuesday nights.

Wednesday 5/17 – Kalyn’s Chicken Tacos – only with whole wheat tortillas, because I don’t know if I mentioned it, but white carbs are not my friend. (note afterwards: DEEEEEE-licious.)

Thursday 5/18 – Amberly’s Cheesy Chicken with Stace’s modifications because if you’re adding cream cheese, you might as well add butter, too. David and Alex will be having white rice with this. I will not. You know the reason why by now.

Friday 5/19 – We go out on Friday nights. Because I am tired.

Saturday 5/20 – Hamburgers on the grill.
